Olivier brings his services in terms of choosing quality cocoa beans,  evaluating their characteristics and putting in place recipe development according to various criteria. Following the necessary steps required to produce couverture from beans, he can create bespoke chocolate for his clients and adapt these recipes to their specific machines.Olivier has worked on several interesting bean to bar projects throughout his career and this enables him to impart his experience.
