Specialised in fine chocolate development Olivier has gained experience in both artisan and industrial techniques. Currently liaising with chocolatiers, Olivier helps to develop their products, teach the technical aspects related to chocolate making and the implementation of certain methods which increase efficiency and shelf life. Olivier adapts recipes to different manufacturing methods (e.g. One Shot, or others ..), whilst creating recipes according to the chocolate and additional ingredients, used by his clients.
